Paçanga Böreği with Kashkaval Cheese
Paçanga böreği with Kashkaval Cheese, pastırma and peppers is a warm appetiser loved for its crispy pastry and melting cheese filling. It is perfect for breakfast tables, gatherings or as a practical savoury snack.

Ingredients
- 3 yufka pastry sheets
- 200 g Sütdiyarı Kashkaval Cheese
- 100 g pastırma
- 1 red pointed pepper
- 1 green pepper
- 1 tomato
- 1 tbsp olive oil
- 1 tsp black pepper
- Vegetable oil for frying
Directions
Cut the red pointed pepper and green pepper into small cubes.
Remove the watery seed part of the tomato and cut the flesh into small cubes.
Slice the pastırma into thin strips.
Heat the olive oil in a pan. Sauté the peppers for a few minutes, then add the pastırma and cook briefly.
Add the tomato and black pepper. Cook the filling for a few more minutes, then remove from the heat and leave to cool slightly.
Grate the Sütdiyarı Kashkaval Cheese or cut it into thin slices.
Cut the yufka sheets into triangular pieces. Place some of the pastırma filling and Kashkaval Cheese on the wide end of each triangle.
Fold the sides inward and roll tightly like a cigar börek. Seal the tip with a little water.
Heat the vegetable oil in a pan. Fry the börek over medium heat until golden on all sides.
Transfer to a paper towel to remove excess oil. Serve hot.
