Spaghetti with White Cheese, Leek, Spinach and Walnuts

The green sauce made with leek and spinach coats every strand of spaghetti, while Piknik Çiftlik Cheese (55%) adds a satisfying finishing touch. Topped with crunchy walnuts, this easy pasta dish is a delicious alternative for everyday meals.

Spaghetti with White Cheese, Leek, Spinach and Walnuts

Ingredients

  • 350 g spaghetti
  • 100 g Piknik Çiftlik Cheese (55%)
  • 1 leek
  • 2 handfuls fresh spinach
  • 2 garlic cloves
  • 3 tbsp olive oil
  • Juice of ½ lemon
  • 2 handfuls walnuts
  • Salt
  • Freshly ground black pepper

Directions

Cook the spaghetti in a large pot of salted water until al dente. Before draining, reserve one ladleful of the cooking water.

Finely slice the leek. Heat the olive oil in a large frying pan and sauté the leek over medium heat until softened.

Add the finely chopped garlic and cook briefly. Add the spinach and continue cooking just until the leaves have wilted.

Remove the pan from the heat. Add the lemon juice, salt and black pepper. Blend the mixture until you have a smooth green sauce. Add a few spoonfuls of the reserved pasta water if needed to loosen the consistency.

Return the cooked spaghetti to the pot and mix it with the sauce. Gradually add some of the reserved cooking water until the sauce coats the pasta evenly.

Divide the spaghetti between serving plates. Crumble the Piknik Çiftlik Cheese (55%) into generous pieces and scatter it over the pasta.

Roughly chop the walnuts, sprinkle them on top and serve immediately.
