Warm Gnocchi Salad with Soft Cheese, Sun-Dried Tomatoes and Pine Nuts
This warm gnocchi salad with sun-dried tomatoes, rocket, pine nuts and Soft Cheese (45%) is a practical yet satisfying dish. Lightly crisped gnocchi, soft cheese and balsamic dressing come together in a warm, flavourful plate that works beautifully as a quick meal or a shared starter.
Ingredients
- 300 g gnocchi
- 100 g Soft Cheese (45%)
- 6–7 sun-dried tomatoes
- 2 garlic cloves
- 1 tbsp butter
- 2 tbsp pine nuts
- 1 cup rocket
- 2 tbsp olive oil
- 1 tbsp balsamic glaze
- 1 tsp salt
- 1 tsp black pepper
Directions
Melt the butter in a large pan. Add the gnocchi and cook over medium heat until lightly crisp on the outside.
Roughly chop the sun-dried tomatoes. Finely chop the garlic.
Add the sun-dried tomatoes and garlic to the gnocchi. Sauté for a few more minutes so the flavours come together.
Toast the pine nuts in a separate dry pan until lightly golden.
Remove the pan from the heat. Add the rocket, balsamic glaze, salt and black pepper to the gnocchi mixture.
Break the Soft Cheese (45%) into large pieces and add it to the salad. Toss gently so the cheese keeps its shape.
Drizzle with olive oil and sprinkle the toasted pine nuts on top.
Serve warm.
